Oven Roasted Vegetables

(I also sometimes add purple or green)
- Preheat oven to 450.
- Place all the veggies on a baking sheet or roasting pan.
- Toss with garlic, olive oil & salt/pepper. Coat thoroughly.
- Arrange veggies in a single layer.
- Roast 20-40 mins until tender, tossing every 10 mins.
